This is quick and easy recipe that uses the leftover meat from a roasted (or purchased rotisserie) chicken. The flavors are so different than my usual weeknight fare, but my whole family loves it (including my non-adventurous husband and finicky toddlers).
Cook noodles.
In food processor, combine jalapeno, honey, cilantro, salt and pepper. Puree until smooth. Add water until desired consistency achieved.
In large skillet, saute veggies in olive oil. Add chicken and blended sauce. Cook until heated through. In large bowl, combine noodles, soy sauce, sesame oil, scallions and pickled ginger. Toss with chicken and sauce.
