Can be made in advance and frozem
Cut chicken into bit size pieces or strips. Sprinkle with garlic salt.
In skillet, heat oil over medium to high heat. Add chicken and cook till golden brown.
Drain pineapple but keep the juice. Add 1/4 cup of the juice to the skillet. Cover and simmer for 6 to 8 minutes.
Remove the chicken from the skillet, put aside. To skillet, add lime juice, honey, soy sauce, cornstarch and remaining pineapple juice. Stir constantly and being to a boil until it's thick and clear, about 1 minute. Add pineapple tidbits and chicken and heat until all is heated through.
If freezing, cook as directed. Let it cool and put in a freezer bag. When ready to use, simply heat it.
Best served over hour rice and garnished with a lime wedge
