Preheat oven to 350*
Prepare your Mustard sauce by combining the mayo, mustard, and sweetener. Divide the sauce in 2.
Salt and pepper both sides of your chicken, and coat it with one half of the sauce. Put the chicken in an oven-safe pan, add the butter, and bake until the largest piece reads 160 degrees.
While baking, sauté the mushrooms in wine, balsamic vinegar, broth, or simply with salt and pepper to your tastes. Cook Bacon and crumble or leave whole.
When the chicken is done, top it with bacon, mushrooms and cheese, and broil the whole thing until the cheese is melted. Serve with the remaining sauce.
