1. Flattren chicken to 1/4 in thickness. In a shallow bowl, combine bread crumbs and 1 tsp. mustard.
2. In another bowl, combine reamining 6 tsp. mustard and honey. Dip chicken in honey-mustard mixture, and then coat with bread crumbs.
3. In nonstick skillet over mend heat, cook chicken in butter until juices run clear, about 8 min. Garnish with fresh parsley if desired.
