Preheat and oven to 400 degrees. In a small bowl, whisk together first 4 ingredients
(orange juice through honey). With a pastry brush, coat pork on all sides with orange
juice mixture. Season pork on all sides with salt, pepper, chili powder and garlic powder.
Place on a baking sheet and roast in the oven 25 to 30 minutes for medium well pork or
until desired doneness.
In a large sauté pan, heat coconut oil over medium heat until hot. To the pan add the
next 5 ingredients(bok choy through garlic). Cook for 5 to 10 minutes, until vegetables
Serve pork sliced over sautéed vegetables and rice.
