Suggest a better description1. Brush a baking dish with oil. Heat a large heavy-based pan. Put the sugar, honey and butter in the heated pan. Stir with a metal spoon over a medium heat until sugar is dissolved and when dark brown (155 degrees on a sugar thermometer), turn off heat
2. Dip the base of the pan into a bowl of tepid water for 3 seconds to cool itand, working quickly, add the bicarb (mixture will rise).
3. Pour into prepared dish stand for 1 hour or until set. Break into pieces to serve.
While standing don't stir.
Dip the honeycomb into chocolate to serve or fold it through ice-cream to make hokey-pokey.
