Suggest a better descriptionPrepare preserving jars. Peel & core apples and cut into 1-inch chunks.
Combine apples, apple juice or cider, water & lemon juice in preserving pot and bring to a boil over medium heat. Reduce heat to medium-low and simmer until apples are very soft, 30 to 45 minutes, stirring often. Mash apples thoroughly, using a potato masher. Stir in honey and spices. Simmer for another 15 minutes, stirring constantly.
Remove from heat. Ladle applesauce into hot, sterilized jars, leaving 1/4-inch head space. Release air bubbles if necessary. Wipe the rims clean. Seal & porcess in boiling water bath 20 minutes.
