A perfect sauce to serve on beef rib roast, beef tenderloin, etc.
1. Put olive oil in a small sauce pan and put on low heat.
2. Saute minced shallots for a few minutes until translucent.
3. Add garlic and sauté for about a minute.
4. Add heavy cream and cook down stirring frequently,
5. Add sour cream, horseradish, lemon juice, dijon mustard, salt and pepper and mix thoroughly.
6. Transfer to air tight container and place in refrigerator to cool.
7. Pull from refrigerator about 30-60 minutes before use to allow the sauce to come to room temperature.
8. Extra sauce can be stored in an air tight container for 2 weeks.
