In medium saucepan, combine butter and cheeses. Cook and stir over low heat until melted, then remove from heat.
Beat egg whites until stiff, then fold cheese mixture into egg whites.
Dip bread cubes into mixture, and place on a cookie sheet lined with wax paper.
Place in freezer until frozen (60 minutes).
Remove from cookie sheet and place in plastic bags. Keep frozen until ready to cook.
When you are ready to cook, preheat oven too 400 degrees and bake for 10 minutes.
