Preheat oven to 400 degrees Butter a four cup casserole dish and sprinkle with sugar
In a metal bowl melt the coholate chisp over a sucepan over simmer ing waterr Stir the chocolate unti it is smooth Remove the bowl form the succepand and whisk in the egg yolks one at a time Whisk in the liquor and melted butter
In a large bowll using an electric mixer beat the egg whites with a pinch of cream of tartar until they are siff and form a peak when the beaters are lifted up from the whites Stiri 1/4 of the siff egg whites in to the chocoloate mixture until just combined P9ur the mixture into the prepared casserole dish and bake for 12 mintutes or until puffed Serve immedieatley
Note: to make individual puffs, divide between 4-5 RAMEKINS. bake about 6 1/2 minutes, watching closely for chocolate to puff and become very slightly dry on edges and edges have pulled away slightly.
