Preheat oven to 350F
Wash and pat dry pork chops, season with salt and pepper
Scrub, dry and pierce potatoes
Place sweet potatoes in oven, bake for approximately 1 hour
Peel, smash and mince garlic
Finely chop chili pepper
Heat cast-iron skillet and add olive oil
Add garlic and chili pepper, saute until garlic is translucent
Using a slotted spoon, remove garlic and pepper from skillet and set aside
Into the skillet, place seasoned pork chops
Brown pork chops on both sides, approximately 3 minutes/side
Remove skillet from heat and top pork chops with minced garlic and pepper mixture
After potatoes have cooked for 35 minutes, place skillet (with pork chops) into oven, bake for 20-25 minutes
Remove potatoes from oven and peel
Place peeled potatoes, butter, salt & pepper, nutmeg and maple syrup in stainless steel bowl and mash.
Cover bowl and keep warm
Remove skillet from oven and let rest for 5 minutes
On warm plates, ladle juice from skillet, place one pork chop, then top with ice cream scoop of potato mash.
Garnish with crushed walnuts and drizzle with warmed maple syrup
The Bhut Jolokia pepper is perfect for this dish because its smokey flavor complements the savory of the meat and the sweet of the potato; however any hot chili should work.
