In a large skillet, cook bacon over moderate heat, cooking until crisp. Transfer to a paper towel, lined.
Discard all the fat except 2 Tablespoons. In the remaining fat, cook the shallot and garlic for 1 minute. Add vinegar, sugar, mustard, oil, salt and pepper to taste.
Bring to a boil, pour over the spinach and toss. Serve sprinkled with bacon and sliced egg
Hard Boiled Egg:
-Place eggs in saucepan of cold water -- cover eggs by 1 inch.
-Bring to a rolling boil over high.
-Lower heat to low-medium boil and cook 10 minutes
-Remove eggs from saucepan into ice filled bowl.
