Few desserts can rival the jubilant atmosphere of a traditional birthday cake for a festive occasion, and this simple recipe is the only one you'll ever need.
Step 1
Set the oven to 350°F. Prepare two (8-inch) round cake pans with butter and flour.
Step 2: Make the cake. Using an electric mixer, beat the butter and sugar at medium speed until they are light and fluffy. One at a time, add eggs, beating after each addition and pausing as necessary to scrape down the edges. Vanilla is beaten in.
Step 3
In a larger basin, combine salt, baking powder, and flour. Beginning and finishing with the flour mixture, add the buttermilk to the butter mixture in an alternating fashion. After each addition, beat at moderate speed until well combined. Evenly distribute the batter among the prepared cake pans.
Step 4
Bake in a preheated oven for 25 to 30 minutes, or until a wooden pick inserted in the center emerges with moist crumbs. After 15 minutes of cooling in the pans, transfer the cake layers onto a wire rack to finish cooling for approximately an hour. Each cake layer should be wrapped in plastic wrap and chilled before frosting for optimal results.
