Baked eggs Mexican style
Preheat oven to 400. Warm tortillas on plate in micro for 1 minute. Press into greased muffin tins. Add egg. Salt and pepper egg. Top egg with fresh veggies of choice (spinach, pepper, green onion, mushroom), add 1 T. Cooked sausage and 1 T. Cheese. Salt and pepper top. Bake for 15 minutes, then remove from tin and put on screen to bake the last 5 minutes so the bottom gets crispy. Serve with salsa.
Jenny's version: in small white cup, mix 1/2 of smaller baked potato, fresh veggies, salt and pepper, sausage, and 1 egg white. Spoon into 2 tortilla cups. Bake as above.
