- Cook peppers and onions, then add garlic. (Season w salt and pepper)
- Add cumin, then Chipotle puree
- Throw in crumbled Chorizo and canned tomatoes.
- Cook for 3-4 min until cooked down and smooth.
- Oil pan, add beans and salt/pepper
- Little of grated lime and then squeeze juice in
- Fry egg with oil, add a little butter to sides of egg white. Salt/pepper and baste
- Grill tortilla with little olive oil
Add sauce to tortilla, scatter beans, add egg, then more beans and sauce. Sliced avocado with lime juice on it, then cotija cheese and touch of cilantro.
