CAKE IS BEST IF MADE 3-4 DAYS AHEAD SO FLAVORS CAN PROPERLY BLEND. KEEP IN REFRIGERATOR AND FROST ON DAY OF USE.
Oven 350 degrees.
Prepare 3 - 9 inch round pans with parchment circles in bottom and sprayed generously with Pam. Can also be greased and floured.
Combine dry ingredients in a large mixing bowl. Mix together eggs, oil and vanilla.
Mix to moisten dry ingredients...do not beat.
Stir in pineapple, 1 c chopped pecans and bananas.
Spoon batter evenly into the pans.
Tap a couple of times on the counter to get air bubbles out.
Bake @ 350 for 25-30 minutes until cake tests done.
Cool in pans 10 minutes. go around edges with table knife and remove with parchment intact to cool completely. WHEN COOL WRAP IN PLASTIC WRAP AND KEEP THE 3 LAYERS TOGETER BY NUMBERING OR MARKING IN SOME WAY.
Frosting
Beat together all ingredients except the pecans.
If too thick use heavy cream to thin down and if too thin add more powdered sugar.
TAKE PAPERS OFF THE BOTTOM OF EACH LAYER AND ASSEMBLE 3 LAYERS ON TOP OF EACH OTHER ON FLAT BOARD.
Use 1 1/4 to 1 1/2 cups between layers.
Frost sides and top of cake. Comb the sides and sprinkle pecans on top.
