Ingredients

1 whole wheat wrap

1 leaf lettuce (such as green leaf lettuce)

2 slices tomato

1 ounce (~1/4 c) bell pepper julienned

1 ounce (~1/4 c) cucumber julienned

1 ounce (~1/8 c) red onion sliced

2 ounces (4 T) hummus

1/2 ounce (~1/8 c) sun-dried tomatoes


Directions

Warm wrap on the grill. On bottom of wrap, spread an even layer of hummus and the sun-dried tomatoes, top with peppers, onion, cucumber, lettuce and tomato then wrap tightly. Serve cut in half on a bias.

I have several hummus sandwich recipes on hand for those times when we crave something light and healthy and simple to make. This wrap recipe is delicious and a little different because of the bell pepper and sun dried tomatoes. Yummy!
