Zucchini stuffed with flavorful Hungarian sausage, brown rice, and other fresh ingredients. Even the kids loved this one.
Pre-heat the oven to 350 degrees. To prepare the filling, combine all the ingredients, including the broth, except the zucchini and 1/2 cup of the feta in a medium sized bowl. Stir gently just to blend.
Brush a 9x13 pan with olive oil as well as the tops and bottoms of the zucchini. Salt and pepper the zucchini to taste. Place the zucchini in the oiled pan and spoon the stuffing into the hollowed out zucchini. Sprinkle the stuffed zucchini with the remaining crumbled cheese.
Bake for 45-60 minutes, until squash is tender. Serve hot.
