GRITS:
Steam cauliflower for 6-8 minutes on stove or in microwave. Drain well, removing as much water as possible to avoid mushiness. Mash well or use a hand mixer. Mix in 1 cup shredded cheese, 2 cheese wedges, and 3 tbsp light butter. Cover and set aside until ready to serve.
SHRIMP:
Bring a large pan sprayed with nonstick spray to medium heat on the stove. Add shrimp and cook until pink and just done, about 3 minutes, flipping halfway through cooking. Add green onions, bacon, lemon juice, 1 tbsp butter and garlic. If you like, add a dash or two of Tabasco. Stir well and remove from heat.
Serving size is 1 cup of faux mix, 1 tablespoon bacon bits on top, and and 4 ounces shrimp mix. 350 Calories per serving.
