Melt butter and add onions. Cook slowly until very soft and lightly browned.
Add sugar and stir until dissolved. Simmer uncovered until thick and caramelised.
Add vinegar, simmer uncovered for around 5 mins, stir in rosemary.
Allow to cool and place in jar(s)
