Very creamy and not too sweet.
During the last 5 minutes of the cycle, I like to add 1 cup of chocolate chip sized anything (pralines, dark chocolate chips, frozen cheesecake, frozen fruit) and top bowls with sauce (caramel, chocolate, raspberry, etc.)
In a medium saucepan, bring milk, cream, vanilla beans, and vanilla bean pod to a slow boil. Reduce heat and simmer for 30 minutes. Stir occasionally.
In a medium bowl, beat eggs, egg yolks, and sugar until thick and pale yellow (2 minutes).
Remove vanilla bean pod from cream mix and discard.
While mixer is on, slowly stream about 1 cup of the cream mixture until the egg mixture. (This will warm it up slowly without scrambling the eggs).
Add egg mix to cream mix. Cook on medium until mixture thickens and coats the back of a spoon.
Pour into a glass bowl, add vanilla, cover, and chill until cool (3 hours).
In a frozen ice cream mixer, pour the cream mixture in, while machine bowl is rotating. Let machine run until thick (25 minutes).
