Iced lemon biscuits dipped in lemon glace
1. Put soft butter in mixing bowl and beat until creamy
2. Add sugar and lemon zest. Beat till light and fluffy.
3. Beat in 2 teapsoons of lemon juice (save rest for icing)
4. Beat in Cream Cheese.
5. Sift in flour, salt and baking soda, work into a firm dough
6. Make shape into a thick rectangle, cover in clingfilm and chill for 30 minutes
Preheat Over to 350F
7. Unwrap the dough and roll out on lightly flavored work area until about 2mm thick (think british pound or silver us dollar)
8. Use cookie cutter or rounder to cut into shape. (I use circles, but whatever is fun)
9. Arrange slightly apart on baking sheet with parchment
10. Bake 12 to 15 minutes - until just a touch of brown on edges. Set to cool completely
ICING
sift icing sugar into bowl. Stir in 2/12 teaspoons of lema juice to make a thick smooth icing (for piping). If you want to dip the cookies in it, work in more lemon juice until it drips slowly off the spoon.
Pipe or dip cookies and let icing set.
Really keep the glace as thick as you can for dipping. too much lemon juice and it will take forever to set.
