A marshmallow candy, dipped in chocolate and covered in toasted coconut.
1) Calibrate candy thermometer by boiling water. Water at sea level boils at 212 degrees F. Temperatures vary according to elevation. When water boils, find the difference from 212. Subtract this amount from recipes that use a candy thermometer.
2) Oil a glass 8x10 baking pan.
3) Soften gelatin in 1/2 cup water. Set aside
4) Boil sugar, 2/3 cup water and corn syrup to 230 degrees F (Thread stage). While syrup comes to temperature, beat egg whites and powdered sugar in a stand mixer. Once syrup comes to temperature, remove from heat and add softened gelatin. With a hand mixer beat gelatin mixture on high for about 2 minute until thick, foamy and smooth. Beat this gelatin mixture into the egg white mixture by adding in a slow ribbon. Blend in vanilla, salt and cocoa. Pour marshmallow mixture into oiled pan, cover with plastic, and chill overnight. Cut into 1" squares.
5) Toast coconut at 325 degrees F for 10-15 minutes. Toss every 5 minutes to prevent scorching. Place in a bowl and cool coconut completely or chill in freezer.
6) Melt chocolates together in a 2-cup glass measure. Microwave at 80 percent power and stir every minute until melted and smooth.
7) Using a fork immerse completely, 1 square of marshmallow at a time, in chocolate and then tap excess chocolate off on the side of the measuring cup. Drop dipped marshmallow into shredded coconut and press coconut into chocolate. Lift and place on parchment lined baking sheets. Cool completely until chocolate has set up.
