Peel zucchini then cut in half length-wise. Cut lengths into fairly thin apple-like slices. In large bowl, toss zucchini with spends, lemon juice, cinnamon, nutmeg and syrup, being sure to coat all pieces.
Put zucchini into 9x9 baking dish. In their bag, crush the soy puffs. Sprinkle over zucchini. Spray top with butter spray. Bake at 350 for 40-45 minutes.
