Lovely cheesey starter, best server before pasta dishes or as a nice starter for any meal
1. Pre-heat oven to 200c, slice the zucchinis length ways so there is a flesh side showing, allow a medium zucchini per person, once sliced, score the flesh side diagonally with a knife.
2. Spray the flesh side of the zucchinis with olive oil and rub salt and pepper into flesh of the zucchini
3. Place zucchinis in a baking tray, grate both cheeses and combine in a bowl, sprinkle the flesh side of the zuchinni with the cheese and top with any extras you might want to add
4. Bake for 40-45 mins at 150c, increase heat for a quicker cook, and zucchinis are done when cheese is a nice colour on top or topping is fully cooked.
