This is a quick and easy recipe.
Mix all the above ingredients in a blender for 5 minutes. If butter is hard, cut up in small pieces so it will blend.
Grease and flour a 10 inch glass pie plate.
Pour mixture in pie plate and let rest for 10 minutes.
Sprinkle 1/2 cup coconut on top.
Bake in pre-heated oven 350 degrees for 50 to 55 minutes.
You can add during blending rum flavor or cinnamon or nutmeg or all three.
You can make it just a coconut custard without the coconut on top too.
Check to see if it is done with a butter knife. If it comes out clean, it is done.
