Dice red onion and fry on medium heat until starting to brown.
Add garlic, cashew nuts and spring onions. Fry for a few minutes.
Add peas and pilau spice mix and curry powder (as conservative or generous as you like).
Add rice and raisins. Stir and serve.
You can add chicken, or other meats, or seafood to the rice, or on the side.
