1.Preheat oven to 400 and place ungreased rimmed cookie sheet in oven.
2. Add Yams to large bowl. Drizzle with 2 tablespoons olive oil and add the remaining ingredients.
3. Toss until yams are well coated.
4. Remove heated rimmed cookie sheet from oven. Coat with remaining 1 tablespoon olive oil. Add seasoned yams. Bake for appox. 30 minutes. Turning midway through.
