This gorgeous looking salad is one of our favourites. This recipe makes two large portions which we generally eat with a simple pasta dish.
1. Slice tomatoes and mozzarella. I usually use 5 slices of each per person.
2. Arrange tomato and mozzarella slices in alternating layers.
3. Drizzle with good quality olive oil and sprinkle with salt.
4. Slice basil leaves thinly and scatter over tomatoes and cheese. (Sorry I can't be more precise about the quantity of basil. I think I use about 1/4 cup of leaves.)
You might want to drain the mozzarella for a while prior to making this.
