This recipe will give you an instant pancake mix that you can use to quickly make pancakes in the morning. The mix is good for up to 3 months.

Combine all dry ingredients in a air-tight container (i.e. flour, baking soda, baking powder, salt, sugar). Good for 3 months.
Preheat a griddle.
Whisk together egg whites and buttermilk. In a separate bowl, mix together egg yolks and melted butter. Combine both mixtures into one bowl and mix well.
Pour mixture into 2 cups of the "instant" mix and whisk until combined. You will see lumps in the mix. Don't work out the lumps. Just make sure you don't see anymore dry mixture.
Pour 2 tablespoons of batter onto the griddle. Once bubbles begin to set around the edge, flip the pancake. Cook until golden brown.
