Mix beans, salt and water, let soak overnight.
Turn instant pot on sauté, hit cancel on keep warm, when pot is hot, add bacon, sauté stirring occasionally, when bacon begins to brown add onion, sauté until soft, add garlic cook for 30 seconds. Hit cancel on instant pot.
While bacon is cooking, mix molasses, maple syrup, soy sauce, 1 3/4 cups water, and baking soda, in a measuring cup.
Add about 1/2 cup of mixture to instant pot to deglaze the pot.
Add beans, the remaining molasses mixture, bay leaves, salt, and pepper. Add enough water to just cover beans.
Close lid on instant, pressure, cook on high pressure for 25 minutes. Let pressure come down on its own.
When pressure is released, remove lid, add mustard and cider vinegar. Press sauté and sauté and stir to thicken. Taste and adjust seasoning.
