A quick rendition of a classic comfort dish.
1. Set the cooker to Saute and when hot, melt the butter and brown the chicken with the seasoning (Poultry seasoning, thyme, oregano, salt & pepper).
2. Add the onion, carrots, celery, and chicken stock.
3. Select high pressure and set for 8 minutes, close the lid.
4. While cooking under pressure, combine the Bisquick, milk, and grated parmesan in a medium-sized prep bowl. Add some pepper or other seasoning to taste if desired.
5. When the pressure cycle is complete, perform a quick release. Set the cooker back to saute and bring to a simmer.
6. Grab a spoon and drop in your dumplings into the simmering liquid. Let it simmer for about 5 minutes until the dumplings are cooker through.
7. Turn off the cooker and let it come off a simmer, stir in cream when ready to serve.
Possibly adding some frozen or canned corn when bringing to a simmer.
