This warm hearty meal is very easy to prepare and requires no prep if you buy baby carrots. The rice/quinoa mix adds some different flavors and texture. Plain brown or white rice would work, but won't be the same. This is not soupy, more thick pasta like sauce
Place frozen breasts and baby carrots in Instant Pot with 1/2 cup water and ranch mix.
Pressure cook for 15 minutes, slow release for 10.
Cook rice in microwave according to package but add chicken bullion cube and cumin. 9 min only in microwave, stir every 3 min.
Remove chicken from pressure cooker and shred.
Reserve some cooking water and saute in IP with carrots and milk.
Add corn starch mix to thicken, or use heavy cream instead of milk
Add shredded chicken and cooked rice to pressure cooker and stir until desired consistency.
Salt and pepper to taste.
