If you go to the namesake cafe in Irondale, Alabama, and order the dish that inspired the movie, you’ll get the traditional condiment of remoulade sauce, and it will be delicious. But my preference has always been to pair fried green tomatoes with another favorite of the Deep South, Pimento Cheese.

Pour the buttermilk into a wide, shallow bowl. In another wide, shallow bowl, mix together the cornmeal, salt, and pepper.
In a large, heavy skillet over medium-high heat, heat about 1/4 inch of bacon fat or oil.
Dip the tomato slices in the buttermilk, then dredge them in the cornmeal, coating both sides. Working in batches, carefully fry the tomatoes in the hot bacon fat until golden brown, about 3 minutes per side.
Remove the tomatoes, drain on a paper towel–lined plate, and season with salt. Repeat to fry all the tomato slices.
Serve the slices topped with Pimento Cheese.
