The sauce
evoo in skillet on medium, add shallot and sautéed x 1 1/2 minutes. Add dry white wine and bring to a boil. Boil x 3 minutes or until reduced x half. Spoon shallot from pan and discard.
Add chicken stock and cook x 2 minutes.
Add butter and cook over medium-low x 3 minutes, swirling pan. Remove from heat and whisk in lime zest and juice. Keep warm over low heat while making fish.
Rinse fish and pat dry. Spread bread crumbs in a baking pan and press fish into crumbs on both sides place in fridge x 30 mins.
Take pan and heat oil over medium, add fish cooking 5 or 7 minutes per side. Don't overcook
Sprinkle each fillet with chopped tomatoes, scallions, roasted red peppers, cheese. Then spoon sauce over each fillet
