Suggest a better descriptionCombine pork and 1 tablespoon cornstarch in a large bowl; toss until pork is coated evenly. Heat oil in large skillet over medium heat. Add pork, in batches, and cook until browned on all sides, about 5 minutes per batch. Remove to slow cooker.
Add pineapple, onion, and bell pepper to the slow cooker. Mix together remaining 1 tablespoon cornstarch, reserved pineapple juice, ketchup, vinegar, soy sauce, garlic and ginger. Pour over pork and pineapple. Mix well.
Cover and cook until pork is fork tender, 4-5 hours on High or 8-10 hours on Low. Sprinkle with cilantro.
