Prepare the night before for a yummy breakfast or brunch the next day. Goes great with my Garlic Cheese Grits.

Cook sausage in a large skillet, stirring until sausage crumbles and is no longer pink. Drain.
Add green onions, zucchini, salt, pepper, Cajun seasoning and garlic. Saute about 4 minutes or until vegetables are tender. Stir in roasted red peppers. Drain and cool.
Spread half of bread cubes in lightly greased 13x9 inch baking dish, top with half of the sausage mixture and half of the cheese. Repeat these layers.
Whisk together eggs and milk. Pour over dish. Cover and chill at least 8 hours or overnight.
Bake, covered, at 325 degrees for 1 hour.
