This is a wonderful recipe for Bruschetta. Preparation is quick and easy but its important to let it set at least 8 hours for the flavors to blend together.
In a medium bowl mix tomatoes, basil, Parmesan, olive oil, garlic, salt, and pepper. Cover and chill in refrigerator 8 hours, or overnight before serving.
To serve, brush Italian bread or French baguette with olive oil, top with shredded cheese or parmesan cheese and place under broiler until hot (it only takes a minute or two).
