2. Bring sugar and water to boil
3. Begin mixing egg whites on medium speed
4. Cook sugar until it hits 240 degrees F
5. Target egg whites to have soft peaks right when sugar is done
6. Add sugar is slow stream to eggs while mixing
7. Continue whipping until bowl is cool to touch. Stop if egg whites begin to become clumpy or dry
8. Add buttercream one TB at a time
9. Add vanilla and salt and mix to combine
Add ~250g dark chocolate (9 ounces) for chocolate
