Been burgers with an Italian twist! Makes 8 burgers. So! If you want leftovers or if you family is full of big eaters you can make a full recipe or you can size it down as needed (that is a feature of Big Oven I believe)

- preheat the oven to 375ºF
- warm olive oil in a skillet on medium-low
- add onions and cook until soft (about 10 minutes)
- add the garlic, basic, oregano and cook for 5 minutes
- stir in the walnuts and breadcrumbs and cook for 3 minutes
- add the drained cannellini beans and mash with a potato masher or a fork
- stir well then cook for 5 minutes stirring intermittently
- lightly oil a baking sheet
- place the bean mixture in a bowl and mix in the tomato paste, cayenne (or kashmiri), parsley and stir well to incorporate
- season with salt and black pepper to taste
- using a dry 1/2 measuring spoon scoop out the mixture placing on the baking sheet
- flatten the burgers slightly and bake for 30 minutes in the preheated oven (375ºF) until golden brown
(- top with mozzarella if you want to by placing them on the finished burgers and baking for an extra minute until melted slightly)
