Slice the zucchini, squash, and onion.
Toss vegetables in a large skillet or wok with 1/4 bottle of Italian dressing and stir fry until veggies are crisp-tender.
Add the tomatoes, cornstarch, basil, and oregano to the veggie mixture stirring until the cornstarch is dissolved. Simmer for 15 mins.
Meanwhile, in another skillet, cook chicken breasts in 1/4 bottle of the Italian dressing until cooked through (about 10-15 mins.)
Remove from skillet and slice chicken into bite-size pieces.
Add chicken to the vegetable mixture in large skillet or wok and cook an additional 20 mins. on low stirring occasionally until mixture is relatively thick and sauce like.
While the chicken and vegetable sauce is cooking, follow directions for cooking the pasta.
Once the pasta is done and the chicken and vegetable sauce has been simmering for 20 mins., serve the pasta on a plate or bowl and cover with chicken and vegetable sauce.
Sprinkle cheddar or mozzarella cheese on top and enjoy!
Be sure the sauce has enough time to thicken slightly. It won't be as thick as regular pasta sauce, but it should not be runny. If needed, you may add a little more Italian dressing to the sauce and/or a little more Cornstarch depending upon the thickness of the sauce.
