In large skillet, use spray cooking oil to sauté bell peppers and onions until tender and translucent. Add garlic to skillet and continue to cook about 1 minutes until you can smell the garlic.
Add seasoned chicken pieces to skillet and continue cooking until chicken is done. About 8 minutes.
Add broccoli, Anaheim peppers, tomatoes, fresh basil, and chicken broth. Season with salt.
Bring to boil and simmer, uncovered, for about 10 minutes until about half the broth is cooked down, stirring occasionally.
