This is a great twist on the American classic grilled cheese
Pre-heat oven to 350*. If using a full size focaccia bread, drizzle the bottom half with a bit of olive oil. If using the Italian meats, layer them on top of the bottom slice of oiled bread. Top with cheeses. Place top of bread on top of cheeses. Place on a parchment covered cookie sheet and bake in the oven 15-20 minutes until the cheeses are melted and soft. Cut into wedges and serve.
If using the smaller circles of focaccia, follow the same directions as above. When they are finished baking, cut each circle into quarters and serve.
For this AMAZING sandwich I like to make a trip to the Italian market and get my cuts from the deli counter itself. Use a variety of meats (soprasetta, salami's, pancetta, proscutto etc.) and a variety of FRESH Italian cheeses (they melt so much better).
