Preheat oven to 400 degrees.
In small skillet on med high heat saute the onion and bell pepper in the olive oil for 3 to 4 minutes.
In a large bowl combine with the meat and other ingredients remembering to reserve 3/4 cup of mozzarella for topping.
Using your hands combine all really well and mold in baking dish.
Spoon the 1/2 to 3/4 cup marinara sauce on top and spread.
Place meatloaf in oven for 50 minutes.
Remove from oven and put the remaining mozzarella cheese with some dried basil on top and continue cooking for about 10 minutes.
Remove from oven and let stand for about 5 minutes or so... enjoy!
