Brown and rinse Italian sausage. Add onion to pot. cook until translucent. Add sausage, tomatoes and chicken broth. Bring to boil, then add orzo pasta. Cook until pasta is tender. Add kale or spinach. Stir and serve topped with shaved Parmesan cheese.
Serve with crusty bread and a salad.
