In a bowl, combine meatball ingredients. Mix well. Roll into tiny balls the size of marbles. I use a small cookie scoop (2 tsp).
Soup:
Bring the chicken broth to a simmer in a large pot over medium heat. Add the mini meatballs and tortellini. Simmer for 8 minutes. In a small bowl, beat together the egg and sea salt.
For the Stracciatella:
Turn the heat to medium-low. Stir the broth in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin strands of egg, about 1 minute. Stir in the spinach, then season the soup to taste with salt and pepper.
Ladle the soup into bowls and serve.
