Another recipe I pieced together out of necessity. I had a craving for garlic bread and I needed to use up some ground turkey and baby spinach.
Mix ground turkey breast with bread crumbs, Italian seasoning and dried basil. Mix well and form into small patties that are slightly larger than the slider rolls you bought (patties will shrink slightly).
Spray frying pan and sautee garlic for 1 min. Add baby spinach and mix well until wilted. Remove from pan and set aside.
Slice plum tomato and spray pan again ( no need to clean off the residue from the sauteed spinach). Flip once, cooking for about 30 seconds per side. Remove from pan and set aside.
If the pan in getting too dirty, wipe it off. Spray again and cook turkey burgers. When turkey burgers are almost done, top with fresh mozzarella. Cover pan and allow to melt.
In another pan, place butter, garlic and dried parsley. Heat until butter melts and mix garlic and parsley in well. Swirl melted butter to coat pan, turn heat to high, and place open side of slider buns onto the pan. Toast for about 1 minute, watching to make sure they don't burn.
Place turkey burgers on garlic bread rolls. top with sauteed spinach and/or sauteed tomatoes.
Drizzle balsamic glaze or dip in marinara sauce.
