1. Sauté mirepoix vegetables in olive oil until translucent
2. Add chicken stock bring to boil over high heat, add salt and pepper to taste. Reduce heat to low, simmer half covered for 30 min
3. Chop chicken into bite sized pieces, add chicken, meatballs, and tortellini to pot, simmer for 15 minutes
4. Add spinach and serve. Top with shredded Parmesan.
