Homemade Italian Wedding Soup
Preheat oven to 350 degrees
Meatballs:
Combine first 7 ingredients - mix by hand and let stand for 10 minutes
Drop meatballs (about a tablespoon) on greased cookie sheet - should make about 40
Bake for 25 minutes
Soup:
While meatballs are cooing, sauté onion, carrot and garlic
Add chicken stock and bring to a boil
Reduce heat
Add spinach and cooked meatballs
Add pasta 20 minutes before serving
