A very simple and delicious soup.
Place potato and onion in saucepan, cover with cold water. Place over medium heat and bring to a boil. Cook until tender. Continue boiling until cooked down and appears thickened. Add salt, pepper,and butter. Continue cooking until thickened. Add half and half, return to a boil and cook until thickened. Serve with cheddar cheese and green onions.
You can use half and half or milk.
